Broccoli And Feta Omelet With Toast

Ingredients

2 slices rye bread, toasted

¼ teaspoon dried dill

2 tablespoons feta cheese, crumbled

2 large eggs, beaten

1 cup chopped broccoli

Cooking spray

Directions

Heat skillet over medium heat and coat it with cooking spray. Add the chopped broccoli and stir from time to time for 3 minutes.

Whisk the egg, dill and feta in a bowl and then pour it over the broccoli but do not disturb it. You can tilt the pan to spread the mixture. Cook for 3-4 minutes and then flip sides and cook for another 2 minutes or until the omelette is cooked through. Remove and serve with toast.
